Salmon Parcels
So easy and very little clearing up!
Salmon parcels
4 salmon fillets
50g (2oz) butter
2 garlic cloves, thinly sliced
1 fennel bulb, finely sliced
250g (10oz) baby carrots, halved
175g (7oz) fine green beans
175g (7oz) baby leeks, trimmed, quartered lengthways
Juice of 1 lemon
Oven temp: 220C, Gas Mark 7 Cooking time 25 minutes
Melt the butter in a large pan then add the garlic, fennel and carrots. Toss them well then cover the pan and cook for 5 minutes.
Add the beans and leeks to the pan, cover and cook for 5 minutes more. Season to taste.
Take 4 large sheets of foil and pile the vegetables in the centre. Arrange a fillet of salmon on top, squeeze over the lemon juice then wrap up to make parcels.
Place parcels in the oven and cook for 10-12 minutes until the salmon is just cooked.
